Following the uncovered ribs, come four second ribs and four first ribs which are presented in a square of 8 ribs. The hazelnut of the second rib is as beautiful as that of the first rib although a slightly more streaky band of fat runs along the handle. The raw ribs are formed from a nice pat of flesh surrounded by a little fat and have a long handle for sumptuous presentations. The fat, of a pretty pearly white before cooking, will delight gourmets once browned in the oven ... The square is trimmed so that you can easily separate the ribs. As an option, at no extra cost, you can choose a presentation of the square "sliced into chops"
