The burgundy snails appeared under this denomination when Talleyrand, Intendant of Napoleon, invited Tsar Alexander 1st to lunch at the Burgundian restaurant Antonin Carême. He decided to serve snails from his garden "à la Bourguignonne" as meat, adding garlic to "hide the taste", parsley to "soften the sight" and butter to "facilitate swallowing". The Tsar, on his return, saw everywhere in Europe the same snails he had greatly appreciated, naming them "Burgundy Snails". Today, it is the official name of the wild "Helix Pomatia" snails, that no longer comes from Burgundy or even France for a long time, but from Central Europe. The "Bourgogne Escargots" family company located in Burgundy, cooks them slowly in a vegetable broth and offers traditional persillade butter and ready to garnish shells, for making authentic "à la Bourguignonne" snails.
