Camus and Castel artichokes are two fairly similar varieties.
The Camus artichoke is historically an emblematic variety of Prince de Bretagne. It appeared in France during the Renaissance and is now the country’s most widely grown variety.
Its leaves are grey-green and its shape is round and copious. It has a refined taste and a soft heart.

Its cousin, the Castel artichoke (“castle” in Breton), is a more recent variety. It has an attractive green hue, slightly lighter than the Camus artichoke. It is known for its large and very fleshy base.
