Capers are the flower bud of the caper bush, salted and pickled in vinegar. If they are not picked, they become flowers, then fruit the size of an olive, and then take the name of caper. Picked green, salted and candied like capers, they are however sweeter to taste. They are frequently given the more colorful name of "tailed capers". They accompany meat, fish, salads, charcuterie...
